Easy and quick cauliflower salad with apples and sugar snap peas, tossed in a creamy dressing and topped with parsley and salted almonds.
The mild cauliflower gets a bit of a kick from a touch of mustard in the dressing, the apples contribute sweetness, the sugar snap peas add freshness, and the almonds provide the finishing touch with some crunch and salt.

Creamy cauliflower salad with apples and snap peas
Ingredients
- 1 pcs. Cauliflower
- 100 gram Sugar Snap Peas
- 2 pcs. Apples
- 1 handful Salted almonds
- 1 handful Broad leaf parsley
Dressing
- 2 tablespoon Sour Cream
- 1 tablespoon White Wine Vinegar
- 1 tsp. Dijon Mustard
- 1 tsp. Honey fluid
- Salt and Pepper
Instructions
- Divide the cauliflower into small florets and boil in lightly salted water for 3-4 minutes – the cauliflower should still be firm after boiling. Drain, rinse with cold water, and let it drip off.
- Cut the snap peas into smaller pieces.
- Dice the apples.
- Mix the dressing together and toss it with the cauliflower, snap peas, and apples.
- Arrange on a plate and top with chopped, salted almonds and chopped parsley.
