Creamy cauliflower salad with apples and snap peas
Easy and quick cauliflower salad with apples and snap peas, tossed in a creamy dressing and topped with parsley and salted almonds. The mild cauliflower gets just a bit of an edge from a touch of mustard in the dressing, the apples add sweetness, the snap peas bring freshness, and the almonds are the finishing touch with some crunch and salt.
Divide the cauliflower into small florets and boil in lightly salted water for 3-4 minutes – the cauliflower should still be firm after boiling. Drain, rinse with cold water, and let it drip off.
Cut the snap peas into smaller pieces.
Dice the apples.
Mix the dressing together and toss it with the cauliflower, snap peas, and apples.
Arrange on a plate and top with chopped, salted almonds and chopped parsley.
