Recipe for citrus salad
Anyone else struggling with a cold and sore throat in this chilly weather…?
This simple citrus salad is packed with antioxidants and vitamin C from oranges, grapefruit, clementines, and pomegranate—perfect for boosting your immune system and it tastes great too! Sweet, fresh, and tangy at the same time with crunch from salty pistachios and perfectly balanced with a sprinkle of herbs. I used parsley, but I think mint would have been delicious too?
The salad can be whipped up in 10 minutes and can be used as a side dish to most warm dishes, as part of a brunch spread, or just as it is as a snack… ?
I’ve made a lemon/sugar syrup and poured it over the fruits, but if you want to skip that step, you can simply sprinkle with sugar instead ?
Citrus Salad

Ingredients
- 1 pcs. Orange
- 1 pcs. Grapes
- 2 pcs. Clementine
- 30 gram Pomegranate seeds
- Pistachios 1 handful
- Parsley 1 small bunch - chopped
Syrup
- 15 gram Lemon Juice
- 25 gram Sugar
- 50 gram Water
Instructions
- Put the ingredients for the syrup in a small saucepan and bring to a boil until the sugar melts.
- Boil for an additional 3-4 minutes.
- Remove from heat.
- Peel your citrus fruits and cut them into thin slices.
- Arrange them on a plate.
- Pour the syrup over the fruits.
- Top with pomegranate seeds, pistachios, and parsley.
- Serve ?
