Recipe for cauliflower patties
Delicious meatballs made from homemade plant-based mince.
The meat mince is replaced with finely grated cauliflower (cauliflower rice), making this recipe perfect for a meat-free/vegetarian day.
I was inspired to try this dish after watching Madmagasinet on DR.

Cauliflower Patties
Ingredients
- 0.5 pcs. Cauliflower From a large cauliflower
- 8 gram Salt
- 1 pcs. Shallots Can be replaced with a small regular onion
- 40 gram Parmesan
- 1 clove Garlic
- 1 slices Stale-dry bread Day-old white bread without crust. Can be replaced with breadcrumbs
- 8 gram Wheat Flour
- 1 pcs. Egg 2 if they are small
- 75 gram Cream
- Oil Neutral in flavor. For frying.
Instructions
- Divide your cauliflower into smaller pieces.
- Put it in a mixer with a chopping function/food processor along with salt.
- Chop it well so that it resembles couscous in texture.
- Let it sit for half an hour.
- Wring/squeeze the cauliflower as much as possible and put it in a sieve to drain.
- The more liquid you can get out, the greater the chance you'll get a meat-like mixture from it.
- Finely chop the onion and sauté it in oil for a few minutes. It should not color, so do it over medium heat.
- The rest of the ingredients (bread, garlic, onion, eggs, salt, pepper, Parmesan, and flour) should go into the blender and be blended into a fine purée.
- Mix the cauliflower blend with the purée and add cream (you may not need to use it all) until the consistency resembles oatmeal.
- Place it in the fridge and let it sit for half an hour.
- Take the mixture out 15 minutes before frying so that it has some time to warm up a little.
- Turn the heat up to high on your pan, as a pan that's too cold will boil the patties instead of frying them.
- When the pan is hot, add plenty of oil.
- Form the mixture into patties using a tablespoon. Don't make them too big, as they need to cook through entirely.
- It takes about 5-7 minutes on each side.
- If you want to shorten the cooking time, you can make the patties into triangles so they get a sear on three sides instead of just two.
- Serve them as an alternative to regular patties or in a sandwich or pita bread.
