Recipe for candied lemon
Candied and dehydrated lemons are a beautiful visual treat and flavor enhancer for desserts or a cold drink.
Here is the recipe for turning sour lemons into sweeter, yet still bitter, flavor boosters. In this version, lemon slices are soaked in a sugar syrup before being dehydrated in a drying oven/dehydrator, making them sweeter than usual. During the process, the liquid evaporates from the lemon slices, while the lemons retain their beautiful color and intense flavor.

Ingredients
- 1 pcs. Lemon
- 85 gram Sugar
- 100 gram Water
Instructions
- Bring water and sugar to a boil in a small pot.
Cut the lemon into thin slices and place them in the sugar syrup. Let the mixture boil for 3 minutes. Remove the pot from the heat, and let it steep for 10 minutes. Remove the lemon slices from the syrup, and let them cool slightly on a piece of parchment paper. Then place the lime slices on a tray in the dehydrator. Dry/dehydrate the lemon slices for 8 hours.
