Caesar Salad with Fried Chicken
Equipment
- 1 Deep fryer or a heavy-bottomed pot
Ingredients
- 8 pcs. cherry tomatoes halved
- 1 package Salad romaine lettuce - or your preferred lettuce
- Parmesan freshly grated or flakes
Caesar dressing
- 1 pcs. Anchovy Fillet finely chopped
- 1 clove Garlic crushed/grated/finely chopped
- 50 gram Parmesan freshly grated
- Salt and pepper
- 2 pcs. Egg Yolk pasteurized
- 1 tsp. Dijon Mustard
- 1 tablespoon White Wine Vinegar
- 0,5 dl Olive Oil
- 1 tablespoon Lemon Juice
Fried bacon
- 100 gram Bacon cut into small cubes
Bread croutons
- 100 gram Bread preferably day-old or stale
- 25 gram Butter
- 10 gram Oil
- Salt and pepper
- 1 clove Garlic or 1 tsp garlic powder - can be omitted
Fried chicken
- 2 pcs. Chicken Thigh can be substituted with chicken breast
- 5 dl Buttermilk or 1 beaten egg
- 1 liters Oil neutral in flavor, for deep frying
- 5 dl Wheat Flour
- 10 gram Salt
- 3 gram Cayenne Pepper or 1 tsp
- 3 gram Cumin or 1 tsp
- 3 gram Paprika or 1 tsp
- 3 gram Smoked paprika or 1 tsp
- 3 gram Onion Powder or 1 tsp
- 3 gram Garlic Powder or 1 tsp
Instructions
Caesar Dressing
- Finely chop anchovies and garlic and place them in a bowl.
- Add egg yolks, mustard, white wine vinegar, salt, and pepper.
- Whisk the ingredients together until well combined.
- Grate the Parmesan cheese finely and stir it into the dressing.
- Add the olive oil gradually, while continuing to whisk until the dressing is thick and creamy.
- Add lemon juice and season to taste with salt and pepper.
Fried Bacon
- Cut the bacon into small cubes.
- Heat the pan over medium-high heat and fry the bacon cubes until crispy.
- Place them on paper towels to absorb excess grease.
Bread Croutons
- Add oil and butter to the pan with bacon fat.
- Cut the bread into cubes (about 2x2 cm).
- Fry the bread until crispy and place on paper towels.
Fried Chicken
- Mix flour, salt, and spices in a bowl.
- Method 1: Marinate the chicken in buttermilk for a few hours, preferably overnight. Dip the chicken directly into the flour mixture and deep fry in hot oil.
- Method 2: Pound the chicken flat, dip in beaten egg, then in the flour mixture, and deep fry in hot oil.
- Deep fry at 190 degrees Celsius (374 degrees Fahrenheit) until the chicken is golden and crispy. Place on paper towels to absorb excess oil.
Serving
- Rinse and dry the lettuce.
- Toss the lettuce with 1-2 tbsp. Caesar dressing.
- Divide the lettuce onto plates.
- Top with cherry tomatoes, bacon, croutons, and sliced fried chicken.
- Add dressing on top and garnish with Parmesan flakes or freshly grated Parmesan.
