Instructions
Caesar Dressing
Finely chop anchovies and garlic and place them in a bowl.
Add egg yolks, mustard, white wine vinegar, salt, and pepper.
Whisk the ingredients together until well combined.
Grate the Parmesan cheese finely and stir it into the dressing.
Add the olive oil gradually, while continuing to whisk until the dressing is thick and creamy.
Add lemon juice and season to taste with salt and pepper.
Fried Bacon
Cut the bacon into small cubes.
Heat the pan over medium-high heat and fry the bacon cubes until crispy.
Place them on paper towels to absorb excess grease.
Bread Croutons
Add oil and butter to the pan with bacon fat.
Cut the bread into cubes (about 2x2 cm).
Fry the bread until crispy and place on paper towels.
Fried Chicken
Mix flour, salt, and spices in a bowl.
Method 1: Marinate the chicken in buttermilk for a few hours, preferably overnight. Dip the chicken directly into the flour mixture and deep fry in hot oil.
Method 2: Pound the chicken flat, dip in beaten egg, then in the flour mixture, and deep fry in hot oil.
Deep fry at 190 degrees Celsius (374 degrees Fahrenheit) until the chicken is golden and crispy. Place on paper towels to absorb excess oil.
Serving
Rinse and dry the lettuce.
Toss the lettuce with 1-2 tbsp. Caesar dressing.
Divide the lettuce onto plates.
Top with cherry tomatoes, bacon, croutons, and sliced fried chicken.
Add dressing on top and garnish with Parmesan flakes or freshly grated Parmesan.
Keep the display on
Notes
Tip: You can of course use roasted or store-bought chicken for the recipe. Enjoy!
