Butterfly Chicken on the Grill

Ingredients
Chicken:
- 1 pcs. Whole Chicken approx. 1400-1500 g
- Salt
Marinade:
- 1 dl Olive Oil
- 2 sprig Rosemary chopped
- 3 sprig Mint chopped
- 1 pcs. Lemon only the juice
- 2 clove garlic chopped
- ½ tsp. Salt and pepper
Instructions
- Light a chimney starter with briquettes.
- When the briquettes are ready, pour them into the grill for indirect heat.
- Cut along both sides of the chicken's backbone and remove it.
- Spread the chicken out flat and press it down.
- Mix all marinade ingredients, using only the juice from half the lemon.
- Place the chicken on the grill and brush with the marinade, sprinkle with salt. Grill for about 35 minutes. Brush an additional 2-3 times during grilling.
- Place the other half of the lemon on the grill and let it grill for about 10 minutes.
- Use tongs to squeeze some grilled lemon juice over the finished chicken.
