Recipe for buddha bowl with mango and sweet potato patties
Today’s lunch was this top delicious Buddha bowl with a base of cabbage and salad, and then I just filled it with colors and good stuff; sweet potato patties, mango, sugar snap peas, cauliflower, and quinoa – and not to forget; an incredibly delicious and slightly spicy mango dressing Yum!
One can’t help but feel a little bit happy when putting together such a colorful array of delightful ingredients, and at the same time, it is both healthy, filling, and packed with vitamins, minerals, and antioxidants. Buddha bowls are also quite handy for cleaning out the fridge. You just use what you have and end up with everything good in a bowl, spiced up with dressing, seeds, and colors.
In this bowl, you get a perfect combo of sweet, salty, spicy, crispy, crunchy, and creamy.
Buddha Bowl with Mango and Sweet Potato Patties
Ingredients
Sweet potato patties
- 250 gram Sweet Potato
- 1 pcs. Egg
- 1 tablespoon Rye Flour
- 1 dl Oatmeal
- 1 tablespoon Tomato Puree
- 1 clove Garlic crushed
- 1 tsp. Paprika
- 1/2 tsp. Cumin ground
- Salt and pepper
Mango dressing
- 1 dl plain yogurt
- 1 tablespoon Mayonnaise
- 1 1/2 tablespoon Mango Chutney
- 2 tsp. Curry
- 1 tsp. Syrup
- 1/2 tablespoon Lime Juice
- Salt and pepper
Miscellaneous
- 100 gram Pointed Cabbage
- Salt and pepper
- 1 tablespoon Oil
- 50 gram mixed salad
- 1 pcs. Avocado sliced
- 100 gram Cauliflower in small florets
- 75 gram Sugar Snap Peas
- 1/2 pcs. Mango cubed
- 1 dl Quinoa boiled
- 1 spsk Pumpkin Seeds
Instructions
- Start with the patties; peel and dice the sweet potato into small cubes and boil for about 10 minutes until tender. Put in a bowl with the other patty ingredients and mash everything together well. Form small patties and bake for 25 minutes in an oven at 200 degrees Celsius (392 degrees Fahrenheit).
- Mix all the ingredients for the dressing together and blend with an immersion blender until smooth.
- Finely slice the pointed cabbage and sauté in a little oil in a pan until just wilted.
- Now arrange everything nicely in a bowl and top with pumpkin seeds
