Recipe for baked camembert with honey pearls
Here we find inspiration from the classic dessert fried camembert to a baked variant with honey pearls.
Serve as a dessert or for brunch.

Ingredients
- 1 pcs. Camembert
- 44.36 gram Water equivalent to 5 cl.
- 50 gram Honey
- 0.67 gram Agar agar
- 460 gram Oil e.g. grapeseed oil
Instructions
- Place oil in the freezer for a few hours.
- Put water and honey in a small pot and heat it up. Sprinkle in agar-agar and mix together, without adding too much air.
- Let the mixture simmer for 2 minutes, stirring occasionally.
- Remove the pot from the heat and let it cool for 10 minutes.
- Pour the oil into a blender and blend it quickly. This makes the oil a bit "soft".
- Using a syringe or pipette, drop the liquid drop by drop into the blended oil.
- Pour the honey pearls into a sieve and rinse them with cold water. Set them aside.
- Preheat the oven to 180 degrees Celsius (356 degrees Fahrenheit).
- Wrap the Camembert in foil.
- Bake it for 30 minutes in the middle of the oven.
- Make a depression in the middle of the Camembert and fill it with the honey pearls.
- Serve immediately.
