Recipe for apple pancakes
A slightly different way to enjoy pancakes.
We got the recipe from: “Sweet and Delicious – A Bite of the American Kitchen with Christel Pixi“, where the author Christel writes the following about the recipe:
“If you like apple pie, you need to try these pancakes! They are made with grated apple and cinnamon and taste both fresh and sweet.”

Ingredients
DOUGH
- 2 pcs. Egg
- 350 gram Yogurt plain
- 4.2 gram Vanilla Extract
- 260 gram Wheat Flour
- 4.8 gram Baking Soda
- 1.3 gram Cinnamon ground
- 3 gram Salt
- 50 gram Sugar
- 3 pcs. Apples large, peeled, and coarsely grated
- Oil neutral in flavor - for frying
TOPPING
- Apples
- Cinnamon a little
Instructions
- In a large bowl, whisk the eggs, yogurt, and vanilla extract and set the bowl aside.
- In a medium bowl, sift the flour, baking powder, cinnamon, salt, and sugar.
- Once well combined, fold them into your wet ingredients using a spatula.
- As soon as all dry pockets are gone, fold in your grated apples into the batter.
- Heat your pan to medium heat, and coat it with a thin layer of oil.
- Now place 1 large tbsp. of the batter onto the pan and allow it to flatten out a bit to ensure it cooks in the center.
- You likely have space for 3 pancakes at a time.
- Cook them for 2-3 minutes on each side, and repeat until all your batter is used.
- Feel free to garnish them with powdered sugar or acacia honey before serving.
