
Recipe for all-in-one chicken stew with vegetables and spelt
I love stews! They usually require a minimum of effort but taste absolutely amazing. This delightful dish is no exception. You get tender chicken, green bell pepper, olives, and spelt – all cooked in a flavorful sauce with white wine, fresh rosemary, and garlic. It tastes so good!
And the dish only requires a few minutes of preparation time; the rest of the time it takes care of itself in the pot while the ingredients meld together, and a wonderful aroma fills your home. This stew is actually easy, quick, healthy, and really delicious!

All-in-One Chicken Stew with Vegetables and Spelt

Ingredients
- Butter for frying
- 4 cloves Garlic
- 700 gram Chicken Breast Fillet
- 1 pcs. Bell Pepper green
- 300 gram White Wine
- 500 gram Water
- 2 cubes Chicken Broth
- 280 gram Spelled Kernels
- 2 sprigs Fresh rosemary
- 2 gram Thyme dried
- 1 glass olive green
- Salt
- 1 handful Broad leaf parsley chopped
Instructions
- Chop the onions and crush or grate the garlic cloves. Sauté both in a pot with a bit of butter.
- When the onions are soft, add the chicken pieces, browning each side.
- Cut the bell pepper into strips and add to the pot, sauté for a few more minutes.
- Add white wine, water, bouillon cube, spelt, rosemary, and thyme. Drain the green olives and add them to the pot as well.
- Let it all simmer for about 20 minutes, until the spelt has absorbed most of the liquid and is fully cooked. Add more water along the way if necessary.
- Season with a bit of salt and serve your dish with a sprinkle of chopped parsley on top.
