The dish requires only a few minutes of preparation; the rest of the time it takes care of itself in the pot while the ingredients blend their flavors and a wonderful aroma spreads through the home. This stew is actually easy, quick, healthy, and really delicious!

Chop the onions and crush or grate the garlic cloves. Sauté both in a pot with a bit of butter.
When the onions are soft, add the chicken pieces, browning each side.
Cut the bell pepper into strips and add to the pot, sauté for a few more minutes.
Add white wine, water, bouillon cube, spelt, rosemary, and thyme. Drain the green olives and add them to the pot as well.
Let it all simmer for about 20 minutes, until the spelt has absorbed most of the liquid and is fully cooked. Add more water along the way if necessary.
Season with a bit of salt and serve your dish with a sprinkle of chopped parsley on top.

This dish also works with rice, couscous, bulgur, or similar alternatives to spelt, if you prefer.
