Recipe for potatoes with lovage

Some might think that boiling potatoes can’t be that hard. But most of us know that it’s not just about throwing potatoes into a pot, filling it with water, adding salt, and setting them to boil. Right?

First of all, new potatoes do not need as much time as “older” potatoes. And secondly, you shouldn’t fill the pot with too much water from the start. Many people put the pot under the cold tap until the potatoes are covered, but that’s a mistake. Oh, and the salt shouldn’t be added from the start either.

Here, I will explain how you can boil delicious new potatoes to perfection!

Prep Time: 2 minutes
Cook Time: 5 minutes

Ingredients

  • Potato new
  • Lovage
  • Flake Salt

Instructions

    1. First, brush the potatoes thoroughly to remove any dirt and place them in the pot. It is always a good idea to use potatoes that are roughly the same size.
    2. Pour cold water into the pot so that only the bottom potatoes are covered with water.
    3. Add lovage.
    4. Place the pot on the stove and bring it to a boil.
    5. Meanwhile, boil water in your kettle.
    6. When the water in the pot is boiling, add the boiling water from the kettle so that all the potatoes are just covered with water.
    7. Now add a couple of tablespoons of salt to the pot. It may sound like a lot, but it's necessary to really bring out the lovely taste of the potatoes!
    8. Let the potatoes boil for 5 minutes.
    9. Then remove the pot from the heat and let the potatoes sit for another 5 minutes. Check them by poking them with a sharp paring knife or toothpick, as the time depends on the size of your potatoes.
    10. Then drain the cooking water.
    11. Serve the potatoes while they are still warm, or place them directly in cold water if they are to be eaten later, for example, if they are to be used in a cold potato salad. Change the water 2-3 times so it is constantly cold. This way, you prevent the potatoes from cooking further and becoming overdone.
