Healthier Blueberry/Banana Muffins.

I made a batch of these healthier blueberry/banana muffins for us to take on our trip, because such a sunny Sunday should definitely be enjoyed.

They are not quite as sweet as regular muffins, but on the other hand, they can be used for breakfast, a snack, or in the kids’ lunchboxes.

They still taste wonderful! With sweetness from the banana, a bit of tartness from the berries, and a twist of vanilla and cardamom.

Ingredients

  • 3 pcs. Egg
  • 2 pcs. Ripe Banana Puréed
  • 50 gram Coconut Flour
  • 100 gram Oatmeal
  • 100 gram Flour
  • 100 gram Milk
  • 4 gram Vanilla Sugar
  • 1 gram Cardamom
  • 32 gram Honey
  • 5 gram Baking Soda
  • 90 gram Frozen blueberries

Instructions

  • Mix all the ingredients, except the blueberries, thoroughly in a bowl.
  • Finally, fold in the blueberries and distribute the batter into muffin forms.
  • Bake for approximately 30 minutes at 200 degrees Celsius (392 degrees Fahrenheit), until golden and thoroughly baked.
