
Recipe for sous vide turnip

This resulted in a turnip with a bite, a hint of sweetness, and plenty of depth in flavor!
The turnip, also known as the white turnip, is one of the more overlooked root vegetables. It is in season from May to September and is often used in ragout, fricassee, etc. The turnip should be prepared with care to preserve its flavor and crunchiness. It can be sautéed, steamed, grilled, and baked but can also be eaten raw, e.g., in a raw vegetable salad or cut into ultra-thin slices with lime or lemon juice, a bit of olive oil, and parsley or thyme.

Sous vide turnip
Ingredients
- 1 pcs. Turnips
- 14.2 gram Butter
Instructions
- Set your sous vide machine to 85 degrees Celsius (185 degrees Fahrenheit) (pro tip: reduce heating time by boiling the water in a kettle beforehand. Then add hot water from the tap to lower the water temperature)
- Peel the turnip and cut it into 2-3 centimeter thick pieces.
- Put the turnip pieces and butter in a vacuum bag.
- Vacuum seal the bag.
- Place the bag in the now 85-degree water bath.
- Cook for 50 minutes.
- Serve.
