Fried chicken burger

This recipe is for a homemade luxury burger: Fried chicken burger with brioche bun, onion rings, mayo dressing, pickled red onions, and pointed cabbage.

Ingredients

  • 200 gram Minced Chicken
  • 3 pcs. Onion
  • 2 pcs. Egg
  • Spices Salt and pepper
  • 106 gram Wheat Flour
  • 50 gram Panko Breadcrumbs can also be used
  • 100 gram Pointed Cabbage White cabbage, red cabbage, spinach, or lettuce can also be used
  • Pickled red onions To taste
  • 2 pcs. Buns Preferably brioche burger bun
  • 60 gram Mayonnaise Homemade or e.g., Miracle Whip

Instructions

  • This recipe is our take on the ultimate luxury burger with breaded chicken that is deep-fried.
  • The dish is served with breaded and deep-fried onion rings, pointed cabbage, pickled red onions, and brioche burger bun.
  • You can easily replace the brioche burger bun with a store-bought burger bun or a regular burger bun.
  • The recipes are at the bottom of the article, they are not presented here.

Onion rings

  • Cut the onions into rings and put them in a bowl with ice water.
  • The bits at the end that you can’t get into nice rings, we use in the chicken mince.
  • Chop the pointed cabbage into smaller pieces and put it in the bowl with ice water.
  • Let it sit in the fridge for about half an hour.
  • Prepare 3 plates, one with flour, one with one and a half eggs, and one with panko, salt, and pepper.
  • Drain them, dry them off, and coat them in wheat flour, then eggs, and then panko.
  • Fry them crispy in a deep fryer/pan for 2-3 minutes.
  • Take them out and drain them on kitchen paper/absorbent paper before serving.
  • Serve immediately.

Fried chicken/fried chicken

  • Mix the minced chicken with half an egg, salt, pepper, and 1 tsp. flour. Let it sit in the fridge for 15 minutes, then take it out and form it into 2 patties.
  • They should be as flat as possible.
  • Put them back in the fridge and let them sit for another 10 minutes (if you have a freezer with space, put them in the freezer).
  • Take the patties out of the fridge and coat them in flour, egg, and panko (with salt and pepper).
  • Deep-fry them at 180 degrees Celsius (356 degrees Fahrenheit) for 4 minutes and place them on absorbent paper.
  • They are ready to be served immediately.

Serving

  • Spread mayo on the top and bottom bun and place the chicken patty on the bottom bun.
  • Add onion rings on top.
  • Fill the top bun with pointed cabbage and pickled red onions and serve immediately.

Panko can be replaced with breadcrumbs.
Typically, chicken mince comes in packs of 400 grams. You can advantageously make a mince of all the meat and form it into 4 patties. If there are only two of you eating, freeze the rest, and the next time you crave fast food, you can take them directly from the freezer and coat them before giving them a turn in the deep fryer.
