Recipe for butter-fried cauliflower
Delicious, flavorful butter-fried cauliflower is a fantastic side dish on the dinner table! We chose it as an alternative to potatoes, and it worked perfectly. Raw cauliflower doesn’t have an amazing taste on its own, but as soon as it’s fried, things start to happen! The flavor becomes delicious and nutty, and maybe that’s why it’s also a popular vegetable among vegetarians, as it adds a little extra depth to dishes where meat is understandably absent. Right now, it’s cauliflower season, but cauliflower isn’t always equally popular among everyone. This is likely because cauliflower easily becomes a bit overcooked, a bit too soft, and a bit mushy. Haven’t we all, at some point, been subjected to eating an overcooked vegetable mix of broccoli, cauliflower, and carrots? When cooked correctly, however, cauliflower can be absolutely amazing, and in this recipe, the cauliflower got a lovely fried exterior while still retaining a bit of “resistance” when biting through the florets. Next time, I will try adding some nuts, either hazelnuts or almonds, to get a bit of crunch in there. Butter-Fried Cauliflower
Lovely nutty flavor. Sprinkled with grated Parmesan. Great alternative to the usual potatoes. A good side dish for many recipes.

- Cutting Board
- Knife
- Frying Pan
- Stove
Ingredients
- 0.5 pcs. Cauliflower
- 30 gram Butter
- 14 gram Oil neutral in flavor
- 50 gram Parmesan about
- Lemon Juice to taste
- Salt to taste - preferably flake salt
- Pepper to taste - from the grinder
Instructions
- Start by rinsing the cauliflower under the tap.
- Then cut the cauliflower into florets.
- Halve the florets if possible.
- Find a pan and place it on the stove.
- Turn the stove on high heat.
- Add oil and butter to the hot pan. It is important that the butter does not take color and become brown.
- Sear the cauliflower until it is well browned and has a caramelized surface.
- Cover the pan and let the cauliflower cook for another 2-3 minutes.
- Transfer the fried cauliflower to a bowl. Squeeze lemon juice over the cauliflower and grate Parmesan on top.
- Serve immediately
