
Recipe for cold bearnaise cream
The delightful taste of Sauce Bearnaise, just in a cold sauce instead.
A warm summer day with steaks on the grill usually doesn’t call for making homemade Sauce Bearnaise. But the rich and tangy flavor pairs so wonderfully with a good steak, so here we have our version of an easy, homemade cold Bearnaise dressing.
Simply mix the ingredients together and let it sit for a few minutes – it doesn’t get any easier.
I got the idea for this recipe from a friend many years ago, when he just mixed a tub of crème fraîche with a packet of Knorr Bearnaise powder. He used it as a dip for chips.

Cold Bearnaise Cream
Ingredients
- 150 gram Sour Cream 18 %
- 15 gram Bearnaise essence
- 1.5 gram Tarragon Fresh or dried.
- 5 gram Lemon Juice
- 3 gram Flake Salt
- White pepper To taste. Can be omitted
- Cayenne Pepper To taste. Can be omitted
Instructions
- The recipe is super easy to make:
- Mix crème fraîche with Bearnaise essence, tarragon, lemon juice, and flake salt.
- Taste it and adjust with white pepper, cayenne pepper, and possibly more salt/essence.
- Let it sit for a few minutes and it's ready to serve.
