Classic soft and flavorful chocolate cake with coconut/chocolate/coffee glaze – mmh…
I’ve made a few adjustments to the recipe and got a result that I think is really delicious and perfect for these little bites, but you can also choose to bake the cake in a small dish.
No matter what, it’s a wonderful classic that’s always a hit.

Ingredients
Dough
- 75 gram Sugar
- 25 gram Brown sugar
- 1 pcs. Egg
- 4 gram Vanilla Sugar
- 110 gram Wheat Flour
- 5 gram Cocoa unsweetened
- 5 gram Baking Soda
- 103 gram Buttermilk
- 75 gram Butter
Topping
- 100 gram Powdered Sugar
- 4 gram Cocoa unsweetened
- 2 gram Vanilla Sugar
- 50 gram Butter
- 50 gram Coconut Flour
- 10 gram Coffee cold
Instructions
Dough
- Whisk eggs, sugar, and brown sugar until fluffy. Put remaining ingredients in the bowl and fold with a spatula until smooth and lump-free.
- Distribute the batter into muffin cups. Fill them just under 2/3 full - the batter rises and there should be space for the topping.
- Bake for about 18 minutes in a 200 degree preheated oven.
- Take the muffins out and let them cool a bit.
Topping
- Put all ingredients in a small saucepan and melt together over low heat, stirring continuously.
- Cut a small hole in each muffin and fill with topping, also distribute topping on top of the muffins.
- Can be served immediately, but it's beneficial to let them sit for a bit so the topping sets.
