Den-du-ved-nok muffins

Maybe a batch of soft and spongy Den-du-ved-nok muffins with a gooey middle and top... These don't take much more than 30 minutes from start to finish and they taste just lovely...

Ingredients

Dough

  • 75 gram Sugar
  • 25 gram Brown sugar
  • 1 pcs. Egg
  • 4 gram Vanilla Sugar
  • 110 gram Wheat Flour
  • 5 gram Cocoa unsweetened
  • 5 gram Baking Soda
  • 103 gram Buttermilk
  • 75 gram Butter

Topping

  • 100 gram Powdered Sugar
  • 4 gram Cocoa unsweetened
  • 2 gram Vanilla Sugar
  • 50 gram Butter
  • 50 gram Coconut Flour
  • 10 gram Coffee cold

Instructions

Dough

  • Whisk eggs, sugar, and brown sugar until fluffy. Put remaining ingredients in the bowl and fold with a spatula until smooth and lump-free.
  • Distribute the batter into muffin cups. Fill them just under 2/3 full - the batter rises and there should be space for the topping.
  • Bake for about 18 minutes in a 200 degree preheated oven.
  • Take the muffins out and let them cool a bit.

Topping

  • Put all ingredients in a small saucepan and melt together over low heat, stirring continuously.
  • Cut a small hole in each muffin and fill with topping, also distribute topping on top of the muffins.
  • Can be served immediately, but it's beneficial to let them sit for a bit so the topping sets.
