Homemade Mayo – How Fast Can It Be Made?

So, how fast can it actually be done? There is undoubtedly no question that some additional tools are needed beyond just manpower and a whisk.

– but exactly which tool gives the fastest result, well, that we did not know. Not until now!

It was only over a cold beer on a hot summer day that Thomas & Per’s competitive nature was truly awakened. Thomas was adamant that the electric mixer was the absolute fastest tool. Furthermore, he insists on using only egg yolks. Per used to share the same belief, but after working with whole eggs and an immersion blender, there has been no turning back for him.

So what do you do? You put it to the test. To ensure it was a completely fair competition, all ingredients were weighed in advance.

The fastest mayonnaise?

Ingredients

Mayonnaise made with a stick blender

  • 1 pcs. Egg
  • Salt Prefer coarse/flaky salt
  • 2.5 gram White Wine Vinegar
  • 15 gram Dijon Mustard
  • 368 gram Oil Flavor-neutral

Mayonnaise made with an electric whisk

  • 1 pcs. Egg Yolk
  • Salt
  • 15 gram Dijon Mustard
  • 14.9 gram Apple Cider Vinegar
  • Oil Flavor-neutral

Instructions

Homemade mayo with electric mixer and yolk

    1. Use a regular plastic bowl.
    2. Put the egg yolk in the bowl.
    3. Take your electric mixer and whip the yolk until it is thick.
    4. Add mustard and vinegar and whip them together.
    5. Add the oil in a thin stream. The mayo will now start to thicken.
    6. Continue adding the oil in a thin stream until the mayo reaches the desired thickness.

    1. Use a tall plastic glass that fits the immersion blender.
    2. Put all the ingredients in the glass.
    3. Place the immersion blender all the way at the bottom of the glass and only then turn it on.
    4. Move the immersion blender around in circles at the bottom of the glass.
    5. Slowly move the immersion blender upwards towards the top of the glass as the mayo thickens. Mover the immersion blender up and down a bit as you get closer to the top of the glass.

  • So who won the contest?
  • Thomas finished his electric mixer mayo made with egg yolk in an impressive 1:45. That's faster than you can get your shoes on, find your car keys, and head to the supermarket.
  • Per, on the other hand, finished his immersion blender mayo made with a whole egg in... 0:59. Don't believe us? Then watch the entire contest below at a slightly sped-up pace.
  • Both mayos taste somewhat alike, and no matter which method you choose to use, there's practically no excuse not to avoid the supermarket version in a big way!
