Recipe for cold-rise oatmeal rolls

The other day we had asparagus soup. And what is the most important thing for a good soup? Of course, it’s some delicious bread to accompany it.

These rolls turned out really good, so I have to share the recipe with you so you can try them as well.

They can be used as a side for all kinds of dishes, but are also super delicious for breakfast.

Cold-Rise Oatmeal Rolls

Equipment

  • Ovenproof dish

Ingredients

  • 500 gram Water warm
  • 550 gram Wheat Flour of good quality
  • 10 gram Yeast
  • 15 gram Salt
  • 15 gram Sugar
  • 20 gram Chia Seeds
  • 20 gram Linseed
  • 50 gram Oatmeal

Topping

  • Oatmeal

Instructions

  • Water and yeast are put in a mixing bowl and stirred together
  • Add all the other ingredients except the salt
  • Mix it together on low speed for 2 minutes. Then add the salt and now stir the dough on full power for 8-10 minutes
  • Put the dough in a container and let it rise for 1 hour before putting it in the fridge until the next day
  • Sprinkle the table with oatmeal and gently turn the dough out onto it. Then sprinkle with oatmeal on top
  • Cut the dough into 12 rolls and place them on a baking sheet with baking paper
  • Heat the oven to 250 degrees Celsius (482 degrees Fahrenheit) fan setting, and place the rolls in the oven with about 1 dl of boiling water in an ovenproof dish at the bottom (to create steam in the oven)
  • The rolls need to bake for about 15 minutes until they are nicely browned, then cool the rolls a bit on a rack so they don't become soft
