There is plenty of flavor and substance in this version, but if you miss the meat, you can add some bacon to the filling (see tip in the note).

Ingredients

  • 130 gram Wheat Flour
  • 3 gram Salt
  • 200 gram Milk
  • 4 pcs. Egg
  • 50 gram Butter melted
  • Butter for frying
  • 50 gram Butter
  • 225 gram Bean Sprouts
  • 225 gram White Cabbage or pointed cabbage
  • 3 pcs. Onion
  • 1 clove Garlic optional
  • 200 gram Grated cheese
  • 45 gram Soya
  • 100 gram Grated cheese for gratination

Instructions

  • Pancakes:

  • Mix flour and salt in a bowl.
  • Add milk, eggs, and melted butter and whisk the batter well - preferably with an electric mixer.
  • Cook the pancakes in a pan with a bit of butter.
  •
  • Filling:

  • Finely slice the cabbage and chop onions and garlic.
  • Rinse the bean sprouts well and let them drain.
  • Melt the butter in a pot and sauté the vegetables in the fat for a couple of minutes.
  • Cover the pot with a lid and reduce the heat.
  • Let the vegetables steam until tender for a couple of minutes under the lid.
  • Remove the pot from the heat and let the vegetables cool a bit.
  • Add grated cheese and soy sauce and mix well.
  •
  • Assembly and preparation:

  • Distribute the filling in the middle of the pancakes.
  • Roll them up and place them in an ovenproof dish with the seam side down.
  • Sprinkle grated cheese over the pancakes and gratinate them in the oven for 20 minutes at 200 degrees Celsius (392 degrees Fahrenheit).
  • Serve with a green salad as a side dish.

Notes

If you can't go without meat, add 1 pack of bacon when sautéing the vegetables - it also tastes great!
