
Recipe for beetroot tart with goat cheese
Recipe for a good vegetarian dish in the form of a savory tart.
Here we have a combination of beetroot and goat cheese, which always go well together.
We have the recipe from the book: “The Big Food for Beginners“, written by Linn Grubbström & Jacob Damgaard. They provide the following tip for the recipe:
“Use a toothpick to see if the tart is fully baked. If something sticks to the toothpick, the tart needs to bake a little longer. You can place a bit of aluminum foil on top so it doesn’t burn.”

Beetroot Tart with Goat Cheese
Ingredients
- 3 pcs. Beetroot
- 6 sprigs Thyme
- 250 gram Cream Cooking Cream
- 3 pcs. Egg
- 7 gram Honey
- 125 gram Butter
- 15 gram Water
- 100 gram Goat Cheese
- 28 gram Oil
- 150 gram Flour
- 30 gram Balsamic Vinegar
- 0.5 gram Pepper
- 1 pcs. Red Onion
- 9 gram Salt
Instructions
- Mix flour and ½ tsp. salt in a bowl. Crumble the butter in.
- Work it into a dough. Add a little water if the dough doesn't come together.
- Press the dough into a tart tin (about 28 cm in diameter). Put it in the fridge for 20 minutes. You can also buy a ready-made tart dough.
- Prick the tart dough with a fork.
- Bake it at 200 degrees Celsius (392 degrees Fahrenheit) for 10 minutes.
- Peel the beetroots. Grate them coarsely.
- Chop the thyme. Cut the onion into thin wedges.
- Heat the oil in a pan. Add the onion, thyme, and balsamic vinegar. Fry for 5 minutes.
- Put the onion mixture in the tart tin. Spread the beetroot over.
- Crumble the goat cheese over the beetroot.
- Whisk eggs, cream, honey, 1 tsp. salt, and pepper together.
- Pour the mixture over the tart.
- Bake at 200 degrees Celsius (392 degrees Fahrenheit) for 35-40 minutes.
- Serving.
