Bell Pepper Soup with Chicken and Tomato

- 350 g Chicken Breast diced
- 1-2 tbsp Butter for frying
- 1,5 pcs. Red bell pepper sliced into strips
- 2 cloves Garlic crushed
- 1 can Chopped Tomatoes
- 8 dl Vegetable Broth
- 100 g Cream Cheese plain or spicy cream cheese
- 1 tbsp Paprika
- 1/2 tsp. Crushed chili
- 1 tsp. Basil dried
- 1 tsp. Salt
- 1/2 tsp. Pepper
Instructions
- Brown the chicken pieces in a bit of butter in a pot.
- Add the bell peppers and garlic, sauté for a couple of minutes.
- Add all other ingredients, stir well and let the soup simmer for 10 minutes.
- Season to taste and serve
