Bell Pepper Soup with Chicken and Tomato

An absolutely delightful and flavorful soup that is both easy and quick to make, in fact, it can be ready in just 20 minutes – an obvious tasty and warming weekday meal.

Ingredients

  • 350 g Chicken Breast diced
  • 1-2 tbsp Butter for frying
  • 1,5 pcs. Red bell pepper sliced into strips
  • 2 cloves Garlic crushed
  • 1 can Chopped Tomatoes
  • 8 dl Vegetable Broth
  • 100 g Cream Cheese plain or spicy cream cheese
  • 1 tbsp Paprika
  • 1/2 tsp. Crushed chili
  • 1 tsp. Basil dried
  • 1 tsp. Salt
  • 1/2 tsp. Pepper

Instructions

  • Brown the chicken pieces in a bit of butter in a pot.
  • Add the bell peppers and garlic, sauté for a couple of minutes.
  • Add all other ingredients, stir well and let the soup simmer for 10 minutes.
  • Season to taste and serve
