
Recipe for cold-risen yogurt rolls with muesli
If you have leftover yogurt or any other fermented milk product, don’t hesitate to use it in your rolls – it gives a soft, moist crumb and rolls that stay delicious for 2-3 days.
In these rolls, besides yogurt, I also used oats and muesli – and they taste wonderful! The rolls were cold-risen overnight, and there was quickly delicious, warm morning bread this morning.
They can also easily rise for just an hour at room temperature, just double the amount of yeast. And the best part? They are made entirely without sticky dough fingers!

Ingredients
Cold-raised yogurt buns with muesli
- 100 gram Water lukewarm
- 20 gram Yeast
- 700 gram Yogurt nature, buttermilk, skyr, Greek yogurt, and buttermilk can also be used
- 105 gram Oatmeal
- 160 gram Muesli
- 500 gram Wheat Flour 1/4 wheat flour can be replaced with a coarser type of flour, if you prefer
- 6 gram Salt
- 21 gram Honey
In addition
- Milk for brushing
Instructions
- Stir in the remaining ingredients and mix well.
- The dough should be firm but slightly sticky.
- Set to rise in the refrigerator overnight.
- Next morning shape the rolls and place them on a baking tray with a spoon.
- Let them “wake up” for about 15 minutes and then bake for approx. 20 minutes at 200 degrees Celsius (392 degrees Fahrenheit) regular oven - until they are nicely golden.
- Serve
