Enjoy a classic Danish snack with a modern twist! These homemade pork rinds are a crispy and flavorful addition to any cozy gathering or as a delectable appetizer. With a simple preparation process and common kitchen equipment, you can transform the skin from a pork roast into irresistible pork rinds that are perfect for sharing.

Many love this snack, and it can generally be challenging to achieve the perfect crispness without burning them.

The air fryer or ActiFry offers a solution where you can enjoy these snacks in a “healthier” way by using less oil. To make crispy pork rinds in the air fryer, start by choosing skin with a high fat content, as this contributes to the crispiness. Dry them thoroughly to remove excess fat and cut them to your preferred size.

Preheat your air fryer and follow the manufacturer’s instructions for temperature settings. Place the skins in the basket and start cooking, making sure to stir occasionally (if using an air fryer) to ensure even cooking. After about 10-15 minutes, your pork rinds should be golden and ready to be enjoyed with your chosen seasoning or dip.

To ensure perfection, choose pork rinds with an even thickness, spread them in a single layer in the basket, and avoid overcrowding to promote crispiness. Remember to stir a few times during cooking and let them cool before serving. This method is a healthier alternative to traditional deep-frying and allows you to enjoy this snack with less fat.

Equipment

Ingredients

  • 15 gram Difficult e.g., from a loin roast. Preferably with a fat layer
  • 18 gram Vinegar
  • 18 gram Coarse salt

Instructions

  • Start with 450 g of rind from a loin roast. Cut the rind into smaller pieces, and halve them for easy cooking.
  • Prepare a pot with 1½ liters of water. Add 1 tbsp. of vinegar to the water and bring it to a boil.
  • Boil the rind in the vinegar-infused water for 20 minutes. This softens the rind and prepares it to become extra crispy.
  • After boiling, rinse the rind thoroughly in cold water. This stops the cooking process and removes excess vinegar.
  • Pat the rind dry carefully with a tea towel to remove all excess moisture. This is crucial to achieving the desired crispiness.
  • Sprinkle the rind evenly with 1 tbsp. of coarse salt. This adds flavor and helps draw any remaining moisture out of the rind.
  • Place the salted rind in a preheated airfryer/actifry at 150°C. Cook them in the bowl for 10 minutes to start the crisping process.
  • Increase the oven temperature to 220°C and continue cooking for an additional 20 minutes. This step ensures the rind becomes golden and crunchy.
  • If using an actifry, the rind may begin to clump together: stir them gently and separate them using a fork.
  • Once the cooking is completed, let the crispy pork cracklings drain and cool on a piece of kitchen paper. This absorbs any excess fat and gives you the perfect texture.
