Pork Crackling in Airfryer/Actifry

Ingredients

  • 15 gram Difficult e.g., from a loin roast. Preferably with a fat layer
  • 18 gram Vinegar
  • 18 gram Coarse salt

Instructions

  • Start with 450 g of rind from a loin roast. Cut the rind into smaller pieces, and halve them for easy cooking.
  • Prepare a pot with 1½ liters of water. Add 1 tbsp. of vinegar to the water and bring it to a boil.
  • Boil the rind in the vinegar-infused water for 20 minutes. This softens the rind and prepares it to become extra crispy.
  • After boiling, rinse the rind thoroughly in cold water. This stops the cooking process and removes excess vinegar.
  • Pat the rind dry carefully with a tea towel to remove all excess moisture. This is crucial to achieving the desired crispiness.
  • Sprinkle the rind evenly with 1 tbsp. of coarse salt. This adds flavor and helps draw any remaining moisture out of the rind.
  • Place the salted rind in a preheated airfryer/actifry at 150°C. Cook them in the bowl for 10 minutes to start the crisping process.
  • Increase the oven temperature to 220°C and continue cooking for an additional 20 minutes. This step ensures the rind becomes golden and crunchy.
  • If using an actifry, the rind may begin to clump together: stir them gently and separate them using a fork.
  • Once the cooking is completed, let the crispy pork cracklings drain and cool on a piece of kitchen paper. This absorbs any excess fat and gives you the perfect texture.
