Okay, admitted! This might not be the healthiest dish in the world, but it is really good! And really simple! And sometimes that’s just what you need…
Here you have; potato skillet with bacon, leeks, and cheese – yum, what a dish!
The potatoes are boiled separately and then fried together with the other ingredients, creating a deliciously creamy potato dish with saltiness from the crispy bacon, sweetness from the fried onions, and heartiness from the potatoes… and the melted cheese, right? It’s just always good! This skillet mix tastes fabulously delightful! And it’s super easy to whip together…
Use it for lunch or dinner, or maybe cook it over a campfire if you’re out on a trip – it doesn’t require many ingredients and is perfect for a bit of cozy comfort.

Potato Pan with Bacon, Leeks, and Cheese

- 1 Pan
Ingredients
- 400 gram Potato
- 1 package Bacon diced
- 1 pcs. Onion large and coarsely chopped
- 1/2 pcs. Leek sliced (optional)
- Butter for frying
- 150 gram Grated cheese
- Salt and Pepper
- Chives for topping, optional
Instructions
- Scrub and peel the potatoes (or just scrub them if they are new potatoes)Set them to boil and cook until they are just tender.
- While they are boiling, fry the bacon in a pan – give it about 3-4 minutes and then add the onions and cook until they are soft.
- When the potatoes are ready, drain them and slice them. Add them to the pan along with the leeks. Fry until the potatoes are lightly browned.
- Add 2/3 of the cheese and gently stir in the pan until the cheese is melted. Sprinkle the remaining cheese on top and let it heat for a couple of minutes until it is also lightly melted.
- Remove the pan from the heat and sprinkle with salt, pepper, and chives. Serve
