Potato Pan with Bacon, Leeks, and Cheese

Use it as lunch or dinner or maybe cook it over a campfire if you're on a trip – it doesn't require many ingredients and is perfect for a bit of hygge and comfort.

Ingredients

  • 400 gram Potato
  • 1 package Bacon diced
  • 1 pcs. Onion large and coarsely chopped
  • 1/2 pcs. Leek sliced (optional)
  • Butter for frying
  • 150 gram Grated cheese
  • Salt and Pepper
  • Chives for topping, optional

Instructions

  • Scrub and peel the potatoes (or just scrub them if they are new potatoes)Set them to boil and cook until they are just tender.
  • While they are boiling, fry the bacon in a pan – give it about 3-4 minutes and then add the onions and cook until they are soft.
  • When the potatoes are ready, drain them and slice them. Add them to the pan along with the leeks. Fry until the potatoes are lightly browned.
  • Add 2/3 of the cheese and gently stir in the pan until the cheese is melted. Sprinkle the remaining cheese on top and let it heat for a couple of minutes until it is also lightly melted.
  • Remove the pan from the heat and sprinkle with salt, pepper, and chives. Serve
