Recipe for salad with pickled red onions and pointed cabbage

A fresh and delicious salad with pointed cabbage and pickled red onions, as tasty as it is simple.

Pointed cabbage is mild in flavor and serves well as a healthier and more fiber-rich alternative to green salad.

In this recipe, we have tossed the salad in a lemon/oil dressing, but see the note for inspiration for a fresh and delicious yogurt dressing.

Prep Time: 5 minutes
Cook Time: 10 minutes

Ingredients

  • 0.5 pcs. Pointed Cabbage
  • 1 pcs. Red bell pepper
  • Pickled red onions
  • 15 gram Lemon Juice
  • 27 gram Olive Oil
  • Spices salt and pepper

Instructions

  • Cut the pointed cabbage into quarters lengthwise.
  • Finely slice the cabbage.
  • Rinse the bell pepper and remove seeds and pith. Dice it into small cubes.
  • Mix the pointed cabbage and bell pepper with slices of pickled red onions in a salad bowl.
  • Combine lemon juice and olive oil in a bowl and season the dressing with salt and pepper.
  • Serve the salad as a side dish to meat or stews needing a green accompaniment.

Notes

Instead of a dressing made from oil and lemon juice, you can toss the salad in a fresh yogurt dressing.
Mix two dl. of plain yogurt with one pressed garlic clove. Season with salt, pepper, and a little lemon juice. Toss the dressing in the salad along with a bunch of chopped, flat-leaf parsley.
