
Recipe for onion compote

Ingredients
- 6 pcs. Red Onion
- 54 gram Olive Oil
- 100 gram Apple Cider Vinegar
- 64 gram Balsamic Vinegar
- 50 gram Sugar
- 18 gram Fresh thyme
- 2.5 gram Dijon Mustard
- 42 gram Honey
- Spices Salt, pepper
Instructions
- Cut the onions into thin slices.
- Heat the oil in a pot and sauté the onions for a few minutes until they become soft and translucent.
- Add vinegar, balsamic, and sugar, and reduce to medium heat.
- Let the compote simmer for about 20 minutes.
- Add honey, mustard, thyme, and salt, and let it all simmer further until the liquid is fully absorbed.
- Adjust the seasoning of the onion compote and pour it into jars.
