Onion Compote

There are almost no limits to where you can use an onion compote as a well-chosen accompaniment.

Ingredients

  • 6 pcs. Red Onion
  • 54 gram Olive Oil
  • 100 gram Apple Cider Vinegar
  • 64 gram Balsamic Vinegar
  • 50 gram Sugar
  • 18 gram Fresh thyme
  • 2.5 gram Dijon Mustard
  • 42 gram Honey
  • Spices Salt, pepper

Instructions

  • Cut the onions into thin slices.
  • Heat the oil in a pot and sauté the onions for a few minutes until they become soft and translucent.
  • Add vinegar, balsamic, and sugar, and reduce to medium heat.
  • Let the compote simmer for about 20 minutes.
  • Add honey, mustard, thyme, and salt, and let it all simmer further until the liquid is fully absorbed.
  • Adjust the seasoning of the onion compote and pour it into jars.
