
Recipe for kringle – danish sweet pretzel
Delightful and delicious recipe for a tasty pretzel.
The pretzel is made from a yeast dough filled with remonce and topped with raisins, almonds, and sugar.
We got the recipe from the book: “Grigos hjemmebag”, written by Markus Grigo, who is known for being a judge on DR’s show: “Den store bagedyst” (The Great Baking Show).
The recipe can be used to make 1 large or 4 small pretzels and serves approximately 20 people.

Kringle - Danish sweet pretzel
Ingredients
DOUGH
- 500 gram Flour
- 150 gram Butter room temperature, but not too soft
- 3 gram Salt
- 100 gram Cane Sugar
- 50 gram Egg about 1 egg at room temperature
- 2 gram Cardamom ground
- 175 gram Milk
- 75 gram Yeast
FILLING AND DECORATIONS
- 100 gram Raisins about
- 2 pcs. Egg lightly beaten
- Sugar
- 100 gram chopped almonds or nuts
REMONCE
- 200 gram Cane Sugar
- 50 gram Marzipan
- 200 gram Unsalted butter room temperature
- 50 gram Syrup high quality - preferably with a flavor, e.g., maple syrup
Instructions
Dough
- Place flour, butter in small chunks, salt, brown sugar, egg, and cardamom in a bowl.
- Warm the milk until it's lukewarm and dissolve the yeast in it.
- Pour the lukewarm milk and yeast mixture into the bowl with the other ingredients and knead the dough thoroughly.
- Add a little more flour if necessary.
- Cover the bowl with a damp cloth and let the dough rise to double size in a warm place.
- Sprinkle a little flour on the kitchen counter and shape the dough into a ball.
- Let it rest for 3-4 minutes.
- Roll out the dough - it should be about twice the length of the baking sheet and have a width of around 40 cm.
Remonce
- Knead brown sugar and marzipan together.
- Add the soft butter a little at a time and stir in the syrup.
- The remonce is now ready to use.
Baking
- Spread the remonce on the dough and sprinkle with raisins.
- Cut the dough lengthwise so you get two long pieces, each 20 cm wide.
- Fold the dough over the filling from each edge and press down well in the center with your fingers so it is closed around the filling.
- Shape the dough into 2 kringler and place them on baking paper on one or two baking sheets - or cut the dough into 4 equal pieces.
- Cover everything again with a damp cloth and let the kringler rise to double size at room temperature or a little warmer.
- Preheat the oven to 200 degrees Celsius (392 degrees Fahrenheit).
- Brush the kringler with egg, sprinkle them with sugar, almonds, or nuts, and bake them for 15-20 minutes.
