Fluffy Pancakes in a Siphon – American Style

What’s almost more American than a stack of fluffy pancakes with maple syrup and bacon? It’s simply delightful to put on the breakfast table or serve at a brunch. However, making American pancakes can take some time and create some dishwashing. To get them fluffy, you usually have to whip egg whites and yolks separately and then fold the fluffy whites into the rest of the batter. There’s an easier way to do it, and it requires a fantastic piece of equipment: a siphon! But then it’s actually quite straightforward. 

Otherwise, here’s the quick version. The siphon is best known here as a whipped cream dispenser. It has stood behind many bars and in many ice cream shops over the years. You unscrew the lid, pour in cream, or in this case pancake batter, screw the lid back on, and add nitrous oxide (N2O) via a cartridge that is screwed onto the bottle. Then you shake it, and voilà, the whipped cream is ready. Or the pancake batter. There has been a major issue with abuse of these cartridges, so as a private individual, you can only buy 2 at a time. So, some planning is required.

Equipment

  • 1 Siphon 1/2 liter
  • 1 Sieve
  • 2 N2O patroner
  • 1 Immersion Hand Blender
  • 1 Immersion Hand Blender
  • 1 Frying Pan
  • 1 Palette Knife
  • Hob
  • Kitchen Scale

Ingredients

  • 3 pcs. Egg M/L
  • 160 gram Whole Milk
  • 10 gram Honey or syrup
  • 10 gram Rapeseed Oil
  • 175 gram Wheat Flour
  • 1 gram Salt
  • 2 gram Cardamom
  • 2 gram Vanilla Sugar
  • 5 gram Baking Soda

Instructions

  • Butter and oil for frying
  • Pour eggs, milk, honey, and rapeseed oil into a hand blender jar.
  • Mix wheat flour, salt, cardamom, vanilla sugar, and baking powder and pour it into the hand blender jar - you might want to sift it in.
  • Blend everything together with a hand blender and sift it into the siphon.
  • Heat a pan over medium heat.
  • Insert the gasket ring into the lid and screw it tightly onto the siphon.
  • Turn the siphon upside down and shoot 1-2 N2O cartridges into it.
  • Shake the siphon thoroughly.
  • Put oil and butter on the pan and let it melt.
  • Shoot 3-5 pancakes onto the pan, depending on how big you want them.
  • The pancakes should be slightly raw/runny on the top side when you flip them. They'll puff up the most when they hit the pan!
  • Serve the pancakes with syrup and bacon for an authentic American experience.
