
Recipe for healthier vegetarian moussaka
A wonderful suggestion for a delicious evening menu could be moussaka; delicious meat sauce packed with vegetables, layered with potatoes, and topped with a creamy egg/cheese sauce…
I’ve used plant-based meat in this version and filled the meat sauce with vegetables – but if you’re not into the vegetarian version, you can just use minced beef.
Instead of classic Mornay sauce for the top, I’ve made a quick sauce just with eggs, milk, and a bit of Parmesan – it’s both faster and lighter on carbs and fat – but again, if you swear by the more classic version, you can make (or buy) a Mornay sauce and top with that…
If you want to skip the potatoes, you can replace them with eggplants.
For the vegetables in the meat sauce, use whatever you have on hand and just season with lots of spices and a splash of red wine.

Healthier Vegetarian Moussaka
Equipment

- Potato Peeler

Ingredients
Vegetarian meat sauce
- 2 pcs. Onion finely chopped
- 3 cloves Garlic finely chopped
- Butter for frying
- 400 g Vegetable Mince
- 2 cans Chopped Tomatoes
- 2 tbsp Sundried tomatoes finely chopped
- 1/2 pcs. Squash coarsely grated
- 2 dl Corn
- 2 dl Peas
- 1 can Tomato Puree small can, about 70 grams
- 1 tbsp Oregano dried
- 2 tsp. Thyme dried
- 1/2 tbsp Paprika
- 1/2 tsp. Cumin ground
- 1/2 tsp. Cinnamon ground
- 1/2 tsp. Crushed chili
- 1/2-1 dl Red Wine can be omitted
- Salt and Pepper
Other Than That
- 300 g Potato peeled and cut into thin slices
- 1 tbsp Butter for the ovenproof dish
Sauce
- 6 pcs. Egg
- 1,5 dl Milk
- 1 dl Parmesan grated
- 1 tbsp Cornstarch
- Salt and Pepper
Instructions
Vegetarian Meat Sauce
- Sauté onions and garlic until golden and soft in a little butter in a large pot. Add the mince and let it brown.
- Add all vegetables and remaining ingredients and let the "meat" sauce simmer for about 10 minutes.
- Meanwhile, peel the potatoes and cut them into very thin slices.
- Season the sauce and layer it with potatoes in a greased ovenproof dish - start and end with a layer of meat sauce.
Sauce
- Whisk eggs together with milk, parmesan, corn starch, and spices and pour the mixture into the dish.
- Cook for 45 minutes in a 200 degrees Celsius (392 degrees Fahrenheit) preheated oven (conventional oven)
- Serve with a sprinkle of parsley
