Mix water, yeast, sugar, coarse salt, and oil in a bowl.
Stir the rolled oats and sesame seeds into the mixture, adding the wheat flour gradually. Optionally, use a mixer.
When the dough is well incorporated with flour, turn it onto the counter and knead until you have an elastic dough. It should not stick to your fingers.
Allow the dough to rise in a bowl covered with a cloth. If you have a shower cap, use it. This creates a good proofing environment in the bowl. Let the dough rise for 30 minutes.

When the dough has risen, it is ready to use.
Use the dough for sausage rolls, with a little ketchup inside, or take leftovers from the meat sauce and make some delicious pizza rolls for lunchboxes or for a trip outdoors with the kids.
