Soup
Start by bringing the chicken stock to a boil and then add the sugar, pepper, and fish sauce.
Finely chop the garlic and fry it until golden in the oil in a small pot.
Set it aside for serving.
Wontons
Place the meat in a bowl and add the chopped spring onion.
Mix everything together with the light soy sauce, fish sauce, pepper, and sugar.
Let it sit for 15-20 minutes if possible.
Place the dough on the kitchen counter and put a teaspoon of the filling in the center of the dough.
Have a small bowl of water nearby to dip your finger in and moisten the dough around the filling.
Shape your wonton by lifting the dough over the filling and pressing it tightly together.
Boil them for 3-4 minutes and they are ready to serve.
Serving
Place a few wontons in a deep plate and pour the hot soup over them along with a bit of the garlic in oil.
Garnish with chopped red chili, coriander, and spring onion.
