Ingredients

  • 100 gram Sugar
  • 59 gram Water
  • 115 gram Rice Wine Vinegar
  • 30 gram Garlic finely chopped/crushed
  • 5.33 gram Chili Flakes
  • 2.3 gram Paprika
  • 5.7 gram Fish Sauce

Roux

  • 7.39 gram Water
  • 4 gram Cornstarch

Instructions

  • Put sugar and water in a small pot. Melt it over medium-high heat.
  • When the sugar has dissolved, add the rice vinegar.
  • Add garlic, chili flakes, and paprika.
  • Use a whisk to mix it together and let it simmer for 5 minutes.
  • Add the fish sauce and then the slurry (cornstarch and water mixed together).
  • Bring it to a boil while stirring and turn off the heat.
  • Let it cool, and it is ready to serve.

Notes

I store my sweet chili sauce in a scalded glass jar in the fridge. It can last for a couple of months.
