Spicy Chickpea Salad with Spicy Chicken, Sun-Dried Tomato, and Bell Pepper

A spicy chickpea salad with spicy chicken pieces, crunchy sweet bell peppers, sun-dried tomatoes, mild avocado, and crispy roasted chickpeas. All served on a bed of fresh salad and with a good portion of hummus. It tastes absolutely fantastic! A perfect mix of spicy, mild, and a bit of sweetness.

Ingredients

  • 200 gram Chicken Fillet
  • 2.3 gram Paprika
  • 0.9 gram Crushed chili
  • 1.1 gram Cumin
  • 2.5 gram Barbecue Seasoning can be omitted
  • 1 can Chickpeas
  • 1 pcs. Red bell pepper
  • 55 gram Sundried tomatoes
  • 1 pcs. Avocado ripe
  • 30 gram Lemon Juice
  • 50 gram salad mixed green salad
  • 30 gram Pine Nuts

For serving

  • 200 gram hummus good quality

Instructions

  • Cut chicken into small pieces and cook in a pan with some butter and spices. Remove from heat.
  • Drain chickpeas and cook them in the same pan until they lightly brown.
  • Remove chickpeas from heat and mix with chicken
  • Cut bell pepper and sun-dried tomatoes into small cubes and mix in the bowl with chicken and chickpeas.
  • Dice the avocado and mix together with lemon juice.
  • Toast the pine nuts in a dry pan until they lightly brown.
  • On plates, arrange a bit of mixed salad at the bottom, put the chickpea/chicken mix on top, and top with avocado and toasted pine nuts.
  • Serve with hummus
