
Recipe for spicy chickpea salad with spicy chicken, sun-dried tomato, and bell pepper
Here you get an absolutely delightful meal salad that I enjoy thoroughly every time! A spiced chickpea salad with spicy chicken pieces, crunchy sweet bell peppers, sun-dried tomatoes, mild avocado, and crispy roasted chickpeas. All served on a bed of fresh lettuce with a good portion of hummus. It tastes absolutely fantastic! A perfect mix of spicy, flavorful, mild, and a little sweet.
It is filled with good proteins, vitamins and keeps you full for a long time, and it is both easy and quick to make.
Besides being packed with proteins, minerals, and dietary fiber, chickpeas are also gluten-free – so if you are gluten-free, this salad is completely legal.
A truly wonderful salad that works excellently as a meal on its own.

Spicy Chickpea Salad with Spicy Chicken, Sun-Dried Tomato, and Bell Pepper
Ingredients
- 200 gram Chicken Fillet
- 1 tsp. Paprika
- 1/2 tsp. Crushed chili
- 1/2 tsp. Cumin
- 1 tsp. Barbecue Seasoning can be omitted
- 1 can Chickpeas
- 1 pcs. Red bell pepper
- 1 dl Sundried tomatoes
- 1 pcs. Avocado ripe
- 2 tablespoon Lemon Juice
- 50 gram salad mixed green salad
- 1/2 dl Pine Nuts
For serving
- 2 dl hummus good quality
Instructions
- Cut chicken into small pieces and cook in a pan with some butter and spices. Remove from heat.
- Drain chickpeas and cook them in the same pan until they lightly brown.
- Remove chickpeas from heat and mix with chicken
- Cut bell pepper and sun-dried tomatoes into small cubes and mix in the bowl with chicken and chickpeas.
- Dice the avocado and mix together with lemon juice.
- Toast the pine nuts in a dry pan until they lightly brown.
- On plates, arrange a bit of mixed salad at the bottom, put the chickpea/chicken mix on top, and top with avocado and toasted pine nuts.
- Serve with hummus
