Remove any tendons from the culotte roast. This is typically on the underside/meat side.
Score a diamond pattern in the fat layer on top of the roast.
Rub the roast well with salt and pepper, and sprinkle with dried rosemary (and optionally garlic powder).
Preheat the airfryer to 180 degrees Celsius (356 degrees Fahrenheit).
Place the culotte roast in the airfryer and cook for 30 minutes.
Reduce the temperature to 150 degrees Celsius (302 degrees Fahrenheit) and continue cooking. Use a meat thermometer to check if the core temperature reaches approximately 54 degrees Celsius (129 degrees Fahrenheit).
Remove the roast and let it rest for 10-15 minutes on a cutting board or rack without covering it.
Cut the roast into slices. Start from the tip, and when you reach the thicker part, turn the roast and cut from the side.
Sprinkle with flaky salt on top and serve immediately.
