Instructions
Put the ice cubes in the glass and pour the rhubarb gin over.
Add tonic, and stir gently.
Garnish with a rhubarb stalk and a strawberry.

Rhubarb Gin Recipe:
Rhubarb is not just rhubarb. There are over 70 different varieties, and they can taste very different. In this recipe, two types of rhubarb are used: Wine Rhubarb, which is dark red with a strong fragrance and strawberry flavor notes, giving the gin a beautiful red color. And Victoria Rhubarb, which is light pink, has a floral scent, and pineapple flavor notes, adding both some sweetness and acidity to the gin. But use the rhubarb you can get. You may add some sugar if you prefer a slightly sweeter gin. This gin has a good balance between acidity and fruit, giving cocktails a fresh and clear taste of rhubarb.It is used in the above Rhubarb G&T. Also, try using it with a citrus-forward tonic or some mashed strawberries.
Infusion time 5 days and requires a 1-liter glass with a tight-fitting lid. Ingredients:
1 bottle of gin (70 cl)
100 g wine rhubarb
100 g Victoria rhubarb
optional 50 g sugar
Rinse the rhubarb and cut it into slices. Place them in your container and add the gin. Shake the container well and place it in the fridge for 5 days. Shake it every day. Strain out the rhubarb and put the gin back in the fridge.The gin can be kept in the fridge for about 6 months.
