You can definitely make a dry rub marinade, but I'm trying to avoid sugar, so I chose to marinate the meat in this homemade sugar-free BBQ sauce.
Use an ovenproof dish and line it with aluminum foil. Pour a little of the marinade at the bottom and place the 4 chicken breast fillets on top. Pour the rest of the marinade over the meat, making sure it is well distributed into the meat.
Wrap the dish in aluminum foil and let it marinate for 30 minutes. It can marinate for longer if you have the time.
Cook it for 3.5 hours at 110 degrees Celsius (230 degrees Fahrenheit) using a convection oven.
Then take the chicken out of the oven and transfer it to a new dish, where it can be pulled apart using two forks.
Filling
Rinse the lettuce and vegetables under the tap and slice them.
Peel the onion and cut it into onion rings.
Serving
Feel free to use spelt buns from this recipe and put 2-3 tablespoons of the pulled chicken in the top bun. Fill the bottom bun with cucumber, iceberg lettuce, tomato, and onion rings and assemble.
Serve immediately.
If you need a little dressing for the dish, you can always use a bit of the homemade barbecue marinade.
