Instructions
Rinse the plums well, halve them, and remove the pits.
Split the vanilla pod and scrape out the seeds with a small, sharp knife. "Mash" the seeds in a bit of the sugar to separate them from each other.
Place the plums, homemade vanilla sugar, sugar, and water in a pot and bring the mixture to a boil.
Skim off the surface if necessary.
Let the fruit mixture simmer over low heat for about 30-40 minutes. Cook until it begins to thicken.
Optionally, blend the jam with an immersion blender if you want it to be completely smooth and even.
Add Melatin according to the package instructions. It indicates how much you need to use, depending on how firm you want your jam.
Pour the plum jam into clean, scalded jars that may have been rinsed in Atamon.
Store the plum jam in a cool place.
Keep the display on
Notes
Plum jam is delicious on bread and rolls and as an accompaniment to ice cream and pancakes. Try also adding a spoonful to your skyr or oatmeal in the morning - it tastes really good!
