Pasta with Spinach and Salmon
Quick dinner? In about 15 minutes, you can whip up a delicious meal with pasta, spinach, Parmesan, and salmon.

Ingredients

Instructions
Cook the pasta according to the package instructions.
While the pasta cooks, prepare the filling.
Get a sauté pan and melt the butter over medium-high heat (10 out of 14 on my stove).
Chop the onion finely and sauté it until translucent, not browned. Reduce the heat if the pan is too hot.
Add the white wine and let it simmer for 1-2 minutes.
Add the spinach so it can melt.
When the pasta is done, transfer it directly from the pot to the pan. This will bring some of the cooking water, which will help thicken the dish.
Flake the salmon with your hands or cut it into smaller pieces and add to the pan.
Grate Parmesan over the top and let it cook for 2-3 minutes on low heat.
Season with salt, pepper, lemon juice, and optionally lemon zest.
Enjoy your meal.
