Pasta with Spinach and Salmon

Ingredients

  • 300 gram Pasta
  • 30 gram Salt
  • 3 l Water
  • 10 gram Butter
  • 1 pcs. Onion small, finely chopped
  • 50 gram White Wine
  • Spinach frozen, 5 "balls"
  • 50 gram Parmesan freshly grated
  • 250 gram Salmon
  • Lemon Juice
  • Salt and Pepper

Instructions

  • Cook the pasta according to the package instructions.
  • While the pasta cooks, prepare the filling.
  • Get a sauté pan and melt the butter over medium-high heat (10 out of 14 on my stove).
  • Chop the onion finely and sauté it until translucent, not browned. Reduce the heat if the pan is too hot.
  • Add the white wine and let it simmer for 1-2 minutes.
  • Add the spinach so it can melt.
  • When the pasta is done, transfer it directly from the pot to the pan. This will bring some of the cooking water, which will help thicken the dish.
  • Flake the salmon with your hands or cut it into smaller pieces and add to the pan.
  • Grate Parmesan over the top and let it cook for 2-3 minutes on low heat.
  • Season with salt, pepper, lemon juice, and optionally lemon zest.
  • Enjoy your meal.

Notes

In the spring, you can easily add wild garlic along with the spinach, it tastes delightful.
