Start by preheating the oven to 150 degrees Celsius (302 degrees Fahrenheit) with fan.
Grate your parmesan as finely as possible. We usually say 20-30 grams per person, depending on what we're using it for.
I used this for a soft and mild pasta dish, so I calculated 30 grams per person. It can easily be used as a snack, in a sandwich, burger, or sprinkled on a salad.
Line a baking tray with parchment paper and place 1 tbsp. of parmesan in piles on the tray. Make sure there's a good distance between them as they will spread out.
Once the oven is hot enough, put the tray in the oven, turn off the fan, and switch to conventional heat.
Bake your parmesan chips for 15-20 minutes. Take them out when they start to get a little color, but be careful not to let them get too much.
They are still soft when they come out of the oven, so take a spatula and place them on paper towels.
Let them cool down so they become crispy.
