Oatmeal Balls with Sugar and Coconut

Ingredients

  • 220 gram Oatmeal Equivalent to 6 dl
  • 79 gram Coconut Flour Equivalent to 2 dl
  • 150 gram Powdered Sugar Equivalent to 3 dl
  • 200 gram Butter Room temperature
  • 20 gram Vanilla Sugar
  • 40 gram Cocoa
  • 30 gram Water
  • 80 gram Sugar For decoration

Instructions

  • Make sure the butter is at room temperature before you start - otherwise, it is impossible to work with.
  • Mix it together with the oatmeal, coconut flour, vanilla sugar, cocoa powder, powdered sugar, and water.
  • First, I tried kneading it with a wooden spoon, which was hard - so I started using my hand.
  • That was also too hard, as the portion is quite large. So, it all ended up in the mixer, and I created a lot of unnecessary washing up.
  • Once the mixture is kneaded into a uniform mass, the balls need to be formed.
  • This is done by hand, and they should be about 2-3 cm in diameter.
  • Pour sugar into a small bowl and roll your balls in it.
  • Let them chill in the fridge overnight, or at least for one hour, before eating.
  • Keep them refrigerated until they are eaten - it doesn't take long for us :-)
